Swedish Meatballs with Pasta


This was our dinner last night and I humbly to say we finished with all plates cleaned. Swedish meatballs popularized by one famous Swedish furniture store Ikea, but this dish is prepared in the same manner like any other cultures. The ingredients distinction defines the tastes and originated from.

Swedish meatball identifies the taste of nutmeg and cardamom, which are the basic spices. Crumbed bread and milk or cream added to give a soft and juicy texture of meat. This recipe traditionally serves
with mashed potato, but here instead I omitted to pasta as carbohydrate.

Ingredients:

300 grams Trottole noodles
1 lb. ground beef, 80% lean, 20% fat
3 pieces dinner roll, crumbled
2 pieces eggs, beaten
¼ cup half & half
3 cloves garlic, grated
1 red onion, minced- separate the half for sauce
1 teaspoon ground white pepper
½ teaspoon nutmeg powder
½ teaspoon ground cinnamon
½ teaspoon cardamom powder
1 teaspoon garlic salt with parsley

Sauce:

2 tablespoon salted butter
1 tablespoon olive oil
minced onion
2 cups half & half
1 cup sour cream
1 tablespoon garlic salt parsley
1 teaspoon nutmeg powder
salt
few sprigs of fresh parsley for garnish, chopped


Procedure:

1. Preheat oven to 400 degrees Fahrenheit.
2. Combine the listed ingredients above except noodles in a large mixing bowl. Use your clean hand to mash to incorporate ingredients.
3. Roll the mixture in your hand to form a ball, meatballs size should be like a golf ball.
4. Arrange them in a flat baking pan and bake for 15-20 minutes. Turning once to brown the top sides. Once done, set aside.
5. Boil the pasta until al dente. I always cook pasta with salt and oil so the noodle won’t get sticky and mushy.
6. In another hand, melt butter and heat olive oil, sauté onion until translucent.
7. Slowly pour in the half & half and add sour cream, season it with all spices. Simmer for 5 minutes over low-medium heat.
8. Throw in slowly the baked meatballs and simmer for few minutes.
9. Place the cooked pasta on a serving plate and pour the sauce with meatballs.
10. Garnish with fresh parsley, and serve. Have a lingonberry jam on sides, taste blend so well.

Buttered Beef Short Ribs



Our recipe for the day is buttered beef short ribs, the name speaks itself. This appetizing dish crispy, juicy and flavorful really has a superb taste. Honestly, I can’t know what to name with this dish, which beef tossed in butter and came out buttered beef.

I haven’t tried yet this recipe using pork ribs, and I believe it will work perfectly well too. The preparation made so simple if oven not available you can deep fry it and toss it in butter.

It is really delicious and finger licking good. Try and let me know what you think of this recipe.


Ingredients:

1.5 lb. beef short ribs bone-in washed
¼ cup soy sauce
3 Tbsp. Chinese wine vinegar or dry sherry
¼ cup brown sugar
1 tsp. ground black pepper
4 cloves crushed garlic
thumb size ginger, smashed
4 stalks fresh green onion, finely chopped for garnish


Coating:

2 Tbsp. butter
3 cloves garlic, minced
garlic salt with parsley powder


Procedure:

1. Place the short ribs in a pot and pour in the soy sauce and wine vinegar. Add the garlic, black pepper, ginger, and sugar. Boil until the meat gets soft and tender.
2. Once done in boiling, drain, remove and place it on a lay paper towel to dry.
3. Melt butter in a pan, and sauté garlic until fragrant. Toss the meat in melted butter.
4. Preheat oven to broil setting and place the meat in a baking dish, sprinkle it with garlic powder. Bake until meat turns golden brown and gets the crispy texture.
5. Garnish it with a lot of fresh chopped green onions and serve.

Pan-fried Ribeye




Ingredients:

1 boneless rib-eye steak, cut into strips
Pinch of salt and fresh ground pepper 
1 tsp. olive oil 


Sauce:

6 Sprigs cilantro
1 Clove garlic, minced
1 lemon 
1 Tbsp. olive oil 
1/2 tsp. salt 



Procedure:

1. Season meat with salt and pepper, fry until it's just browned. Set aside. 

2. In a food processor, puree the cilantro with garlic, salt, lemon juice and olive oil.

3. In the same pan, cook the mixture over medium heat until heated through, stirring occasionally.

4. Serve.

Beef and Zucchini Pasta

I hardly thought of what menu for tonight, and checked what I got in my kitchen. I had penne noodles in my pantry, zucchini and red bell pepper bought yesterday and got also sirloin beef in the freezer. I came out with this recipe from nowhere, I just made everything easy and simple but the outcome is perfect. You would love the flavorful beef and the crisp of zucchini in every bite. Try it and the taste is wonderful.

Ingredients:


1lb. Penne noodles
1 lb Sirloin beef, cut in strips
2 Medium size zucchini, cut diagonally
Olive oil
a medium size red bell pepper chopped
3 Cloves garlic, crushed
1 Sweet onion, chopped
1 tsp. red pepper flakes
2 Tbsp. Oyster sauce
2 Tbsp. light soy sauce
Salt and ground black pepper

Procedure:


1. Fill a large pot of water with salt, and let it to boil. Slowly add the pasta and stir gradually so the noodles won't stick together. Cook the pasta al dente.

2. While waiting for the pasta to cook, in a bowl, marinate the beef in oyster sauce and sprinkle with ground black pepper.

3. Place the non-stick saucepan and heat the olive oil. Saute the garlic and onion for 2 minutes.

4. Add in the marinated beef and simmer until the beef turns brown.

5. Next is the vegetables, toss them together and simmer for another 3 minutes.

6. Pour in soy sauce and season with red pepper flakes, little bit of salt and ground black pepper.

7. Toss the pasta with beef and vegetables and bring to simmer for a minute.

8. Serve hot and sprinkle with Parmesan cheese if desired.

Spaghetti Bolognese with Mango Peach Salsa


Today, I came up a new menu after a marathon of oriental food on the table. Spaghetti Bolognese, which all kids loved. My daughter has tasted and even asked for another plate. This recipe is perfect for a busy Mom. Any existing sauce can keep in the fridge and reheat for the next meal. Try this satisfying sweet spaghetti bolognese with mango peach salsa.

Ingredients:

1 lb. Spaghetti noodles
26 oz Spaghetti sauce
1 lb Ground beef or ground turkey
2 cups Mango with peach salsa
Olive oil
6 Cloves garlic minced
1 Large size red onion chopped
2 Carrots diced
salt and ground pepper
Parmesan cheese

Procedure:

1. Boil the spaghetti noodles according to the package direction.
2. Drain in a colander. Set aside.
3. In a big sauce pan, heat olive oil over moderate flame.
4. Saute garlic and onion until fragrant.
5. Add the ground beef, stir and cook until the meat turns brown.
6. Add the diced carrots and next the spaghetti sauce.
7. Bring it to simmer. Stirring occasionally.
8. Add the mango with peach salsa. Simmer for 5 minutes.
9. Season the sauce with salt and pepper.
10. Mix desired amount of sauce in pasta.
11. Sprinkle a Parmesan cheese is optional.

Spicy Beef Biryani



Alright, why not to try this Indian recipe. Beef biryani is a spicy and aromatic dish whereby can found mainly in Indian and Pakistan cuisine. I tried to cook this before, but I'm reluctant to post because I didn't get yet the perfect taste. Now, here we go with the help of a good friend where She is a chef in one restaurant back in Singapore where she worked. She is not Chinese, though Indian but I'm telling you She is nothing but a very good cook. Let's get down the business with this long procedure of cooking the spicy beef biryani.

Ingredients:

8 cups Basmati white rice, uncooked
3 lbs. Pot roast beef, cut in small chunks
Olive oil
2 Red onion, finely sliced
8 Cloves garlic, minced
1 Tbsp. Grated fresh ginger
8 Fresh roma tomatoes, chopped
2 Fresh lemon
1 can Chick peas
a can of garlic tomato sauce
4 cups Plain yogurt
a handful of raisin
chili powder
curry powder
coriander powder
paprika
cumin powder
turmeric
cajun powder
ginger masala powder
ground pepper and salt to taste
2 cinnamon sticks
1 cup Fresh cilantro, chopped

Procedure:

1. Cook the 8 cups of basmati rice, set aside.
2. In a big wok, heat oil, saute the garlic, onion, ginger and fresh tomatoes.
3. Put the beef and cook until tender.
4. Pour the can of garlic tomato sauce. Simmer.
5. Add in the plain yogurt and stir well till the mixture is even.
6. Put all the powder spices, estimate and taste the sauce if perfect.
7. Put the cinnamon sticks.
8. Pour in the chickpeas and raisins.
9. Dash with salt and pepper to taste.
10. Squeeze the sauce with fresh lemon.
11. In an aluminum pan mix the rice and the sauce evenly.
12. Top it with the remaining chopped tomatoes and cilantro.
13. In 350 degrees oven, bake the rice for 30 minutes.
14. Serve while its hot.

Easy Mushroom and Parsley Spaghetti


This pasta should be loved by everyone because of the rich tomato sauce taste, combined with healthy vegetables. Preparation doesn't take much time. This pasta can be served for any occasion and season. Try it, you will love every twist and bite of mushroom and parsley spaghetti.

INGREDIENTS:


1 lb spaghetti
4 Tbsp. olive oil
15 oz tomato sauce
227 g or 8 oz portobello mushroom sliced
1 cup fresh parsley finely chopped
0.99 lb lean ground beef
150 g smoked beef sausage chopped
7 cloves garlic crushed
1 white onion chopped
1 tsp. Italian seasoning
1 pepper bell orange or red
dash of salt and ground black pepper
grated parmesan cheese

PREPARATION:

1. Boil the spaghetti in 6 quarts water with oil and pinch of salt until al dente. Drain and set aside.
2. In a large skillet, heat oil and saute garlic and onion.
3. Add the ground beef, saute until golden brown.
4. Add in the sausage and saute for 3 minutes.
5. Add the mushroom, parsley and bell pepper.
6. Pour in the tomato sauce.
7. Season it with Italian seasoning, salt and ground black pepper.
8. Mix with the cooked pasta and sprinkle with grated Parmesan cheese.

TIPS:
Best when use fresh tomatoes.

Easy Beef Steak


Beef Steak, beef steak, beef steak...just to hear the name its so really inviting. Many ways to prepare a steak, but preferably to do it in a simple way but heavenly delicious. Makes everything easy, preparation no pressure. Try and taste the easy beef steak.

INGREDIENTS:

1 lb. beef chuck steak
half large white onion (slice in ring)
coarse black pepper
3 Tbsp. soy sauce
half large fresh lemon
1 Tbsp. oil
1/2 c water

PREPARATION:

1. In a skillet, boil the beef in 1/2 c water together with oil and soy sauce.
2. Heat in medium, dash with black pepper and let it simmer until the sauce thickens.
3. Add in the onions and squeeze on some lemon.
4. Flip the beef side to side,cover and simmer for 2 minutes.
5. Beef steak is ready, serve with hot plain rice.

Beef and Tomato


Beef in tomato is another recipe for busy Moms. The family is surely going to love the saucy and flavorful taste. I had tasted this dish in China, widely served in many restaurants around Guangdong Province.

Ingredients:

300 g Beef brisket, cut in chunks
2 Tbsp. oil
4 Large size tomatoes, quartered
1 Yellow onion, sliced
a thumb-sized fresh ginger root,sliced
1 cup Green bell pepper, sliced
1 tsp. Sugar
1 Tbsp. Soy sauce
1 tsp. Sesame oil
1 tsp. Chinese cooking wine
Salt to taste

Procedure:

1. Heat oil in a wok and saute the ginger follow the beef, saute for 3 minutes.
2. Mix in a bowl the sugar, soy sauce, sesame oil and cooking wine. Then pour in. Cover and simmer for 15 minutes over low heat.
3. Add in the onion, green bell pepper and tomatoes, stir slowly.
4. Add the green onion and season with salt.
5. Ready to serve.

Easy Stir-Fry Beef with Black Pepper Pasta


This is one of my best pasta recipe. My husband was amazed with the gracious taste the first time I made this. Preparation is very simple, and few ingredients required. For the black pepper lovers, I'm sure you'll love this too.

Ingredients:

300 g Beef bottom round toast, thinly sliced
300 g Fettuccine noodle
2 Tbsp. Butter
1Tbsp. Olive oil
1 tsp. Freshly coarse ground black pepper
3 Tbsp. butter
1 Yellow onion, sliced
1 cup Green bell pepper, thinly sliced
1 tsp. light soy sauce
dash of salt to taste

Procedure:

1. Boil the pasta in 8 cups of water with salt and oil for 12-13 minutes. Drain.
2. In a bowl, marinate the sliced beef in enough soy sauce for 3 minutes.
3. Melt the butter and heat oil in a large skillet, saute the marinated beef until brown and steam up the liquid.
4. Add in the onion and green pepper, sprinkle with coarsely ground black pepper. Saute for a minute.
5. Toss in the pasta.
6. Serve while its hot. Enjoy.

TIPS:
You may like to dash it with fresh grated Parmesan cheese. Taste is awesome.

Easy Braised Beef Shank (炖牛肉小腿)



This recipe is another way of braising beef. Using hind shank part of beef actually is not that complicated, most commonly this part of beef is used in preparation of soups. Here, I added some healthy vegetables and I'm sure you are going to enjoy it.



INGREDIENTS:

1.70 lb./ 770 gm. beef hind shank
8 oz tomato sauce
2 medium size potato (cut into wedges)
2 medium size carrot (cut into wedges)
half of large size green bell pepper
2 stalks green onion
2 Tbsp. oil
1 medium onion
4 cloves garlic
2 whole bay leaf
5 slices pickle
salt and ground pepper to taste

PREPARATION:

1. In cooking pot put the beef, bay leaf and 2.5 cups water. Let it to boil until the meat is tender.
2. When the meat is tender separate the beef and broth. Set aside.
3. In a wok, heat oil and saute garlic and onion.
4. Add the potatoes and carrots, saute for 2 minutes.
5. Put the beef and pour the tomato sauce. You can add the broth as necessary. Simmer for 5 minutes.
6. Add in green bell pepper, pickles and green onion. Wait until sauce thicken.
7. Season with salt and ground pepper to taste.
8. Best serve with hot plain rice.

Easy Broccoli with Cornedbeef



Broccoli is one of my favorite vegetables because it has been found by nutrition experts to contain a high level of vitamin C, A and K and rich in dietary fiber. It will take you approximately 10-15 minutes to prepare a broccoli with corned beef dish.


INGREDIENTS:

2 bunches of fresh broccoli
2 cups water
a can of corned beef
1 medium red onion
2 tbsp. olive oil
salt to taste

PREPARATION:

1. Separate the broccoli florets from the stem.
2. In a cooking pot boil 2 cups of water.
3. When the water boiling remove from fire and blanch the broccoli for 3 minutes.
4. In a pan heat the oil and saute the onion and the corned beef for 1 minute.
5. Put the blanched broccoli together with the sauteed corned beef. Simmer for a minute.
6. Ready to serve.

TIPS:
Don't overcook the broccoli because it lessen the value of nutrients.
